An artisanal fig preserve rooted in the heart of Vence

With its smooth texture and naturally sweet flavour, our fig preserve is a true delight for the taste buds. Made from fresh figs carefully hand-picked in the Vence region, they are slowly cooked in copper cauldrons to bring out a rich and intense taste. Packed with fibre, vitamins, and natural antioxidants, it’s both a wholesome and indulgent choice for breakfasts or desserts.

Traditional craftsmanship at Confiserie Florian

At Confiserie Florian, making fig preserve is a refined art. Every step is carried out by hand, following age-old methods that honour quality and precision. On the banks of the River Loup, the baskets of figs arrive early each morning to be prepared straight away. Only the juiciest, ripest fruits are chosen, their pulp delicately extracted and gently mixed with sugar. The slow copper-pan cooking process allows flavours to develop fully, resulting in a velvety, smooth texture.

As the preserve simmers, its sweet aroma fills the workshop, much to the delight of curious visitors. Once finished, it’s poured into sterilised glass jars by hand, sealed with the signature magenta-pink label that identifies our fig preserve. Each pot reflects traditional know-how and a real love of culinary heritage.

Flavour pairings and inspired serving ideas

Our artisanal fig preserve pairs beautifully with a variety of savoury and sweet dishes. It adds a wonderful sweet contrast to foie gras, elevates any cheese board, and works perfectly on toasted bread, crêpes, or waffles for a delectable start to the day.

For adventurous cooks, it’s also brilliant as a base for savoury recipes — try it as a glaze for duck breast or pork chops.

A fascinating fact: before it becomes a fruit, the fig must be pollinated by a wasp, which enters through a tiny opening. When you slice open a fig, the darker centre often marks the passage where the wasp once travelled. Nature’s magic brings us these sun-drenched fruits — and our preserve full of authentic regional flavour.
