Violets from Tourrettes

La Confiserie Florian has been working closely with Marcel Quentin for the last 30 years. Located in Tourrettes-sur-Loup, just a few kilometres from the Confiserie, M. Quentin’s violet fields cover 2 acres. “Each year our Confiserie receives between 200 and 300 kg of violets which are transformed into preserves and crystallised flowers by our talented confectioners."

The violet confit we craft in our workshop is more than just a floral treat. It’s a story of land, loyalty, and savoir-faire. The violets we use grow just steps away from the Confiserie, in the plantation of Mr. Quentin, our trusted partner for over thirty years. Handpicked between November and March, they’re carefully prepared to be transformed all year long into this delicate flower preserve with its silky texture and subtle fragrance. Each jar tells the tale of Provence’s gentleness and the precision of our artisanal gestures.
