Oranges from Nice

Charles-Michel Fatou has provided us with bitter oranges for the last 30 years! His fields are located in Nice in the Gairaut area. Mr Fatou's family settled on this land in 1840 and the orange trees were planted in 1920. “Each year, in February, Mr. Fatou brings 2 tons of bitter oranges to the Confiserie Florian.”

Bitter orange, beautifully bold

This is not your average marmalade. Confiserie Florian’s artisanal bitter orange jam, presented in a generous 500g metal tin, is a celebration of citrus with character. Made from oranges grown in the hills of Nice, harvested by hand and transformed the very same day, it captures the essence of the Côte d’Azur in every spoonful.

The bitterness is not harsh, but noble — softened by slow candying, balanced by natural sweetness, and lifted by the aromatic oils of the peel. It’s a jam that speaks with confidence, offering a flavour both intense and elegant, with notes of zest, blossom and sunshine.

A jam for those who savour

Spread it on warm toast, swirl it into Greek yoghurt, or spoon it onto a slice of buttery brioche — and let the citrus sing. But this jam also shines beyond breakfast. Try it with aged cheddar or goat’s cheese, as a glaze for roast duck, or folded into a dark chocolate ganache. It’s a versatile companion for those who love to cook, entertain, and surprise.

The texture is rich, with fine strips of peel that offer a gentle chew. The flavour lingers, evolving with each bite. It’s not just a condiment, it’s a conversation.

The elegance of the tin

Why a metal tin? Because it’s beautiful, practical, and protective. The opaque container shields the jam from light and humidity, preserving its aroma and texture for longer. It’s a nod to tradition — the kind of packaging you’d find in a well-stocked pantry, waiting patiently for the next indulgent moment.

And let’s be honest, it looks rather lovely on a kitchen shelf. No need to hide it away. This is jam with presence.
